My lifelong friend and travel buddy, Jill shared this simple, melt-in-your mouth breakfast salad and it's now one of our favorite anytime meals ...

  1. Slice or dice:
    • 1/2 Roma tomato (any tomatoes, really)
    • 1/2 avocado
    • Small wedge of red onion
  2. Make a saladmix veggies with greens (spinach, kale, romaine lettuce)
  3. Fry an egg.
  4. Lay it atop salad.
  5. Drizzle the whole business with lemon juice.

Serves one.
