- Roast a handful of mushrooms.
- Toast some thick-cut wheat or multi-grain bread.
- Scramble 1-2 eggs, add in the roasted mushrooms, handful of goat cheese and freshly-chopped green onions.
- Place eggs on bread and top with another toasted piece (or eat open-faced).
