GOOD MORNING, SANDWICH

 

Another breakfast win by Jill. It's fast, it's stackable, it's nutritious. This is excellent van fare as well as the perfect, hearty, day-start sandwich ...

  1. Roast a handful of mushrooms.

  2. Toast some thick-cut wheat or multi-grain bread.

  3. Scramble 1-2 eggs, add in the roasted mushrooms, handful of goat cheese and freshly-chopped green onions.

  4. Place eggs on bread and top with another toasted piece (or eat open-faced).

Serves one.
