IRISH SALAD

 

This quick meal is veggie, very fresh and the colors of the Irish flag (thus the name).

  1. Take a medley bag of baby potatoes (red, purple and gold).

  2. Boil until soft. (10 - 12 minutes, depending on your stove).

  3. Mash in the pot with a dab of Smart Balance, splash of Coconut Milk and handful ofgreen onions.

  4. Plate with a generous handful of fresh baby spinach and a clementine orange for color.

Serves four.
