IRISH SALAD
This quick meal is veggie, very fresh and the colors of the Irish flag (thus the name).
Take a medley bag of baby potatoes (red, purple and gold).
Boil until soft. (10 - 12 minutes, depending on your stove).
Mash in the pot with a dab of Smart Balance, splash of Coconut Milk and handful ofgreen onions.
Plate with a generous handful of fresh baby spinach and a clementine orange for color.
Serves four.
